The concept of minimalist accessories seems pretty contradictory.  If you’re that into minimalism, just eliminate accessories altogether.  Go for pants that don’t have belt loops, let alone need a belt to stay up.  Use your phone as a watch and leave your wrist bare.  Don’t get glasses, get lasik.  Don’t wear scarves.

Otherwise, you’re just wearing accessories with a minimalist theme, which is fine if that’s the point.  Meta minimalism seems to be a force behind Giuliano Fujiwara’s clean, simple, and witty accessories.  I love the men’s FW10 collection, especially the glossy gold collar, lapel, and cuffs.  Looking forward to seeing them styled in shoots.
